From what I&#039;ve read, I have the impression that authentic Italian biscotti have less sugar and little or no fat -- and often use olive oil rather than butter when they do have fat. The extra sugar and butter make for the softer texture of more American-style biscotti. So keep looking for that ideal biscotti recipe -- it&#039;s out there!</description>
